- 8 cherry tomatoes
- 200ml Mitoku Organic Authentic Mirin
- Peel off the tomato skins using the hot water method: boil some water, pour over the tomatoes, wait a few seconds then place the tomatoes in cold water and peel off the skin.
- Bring the mirin to the boil in a pan and simmer until the quantity has reduced by half (about 100ml). Remove from the heat.
- Put the tomatoes into the pan with the mirin and leave to cool.
- Put the mixture in a large container and refrigerate to chill before serving.
