This effortless dessert is made just tomatoes and simmered mirin. The sweetness and acidity of tomatoes match perfectly with the mirin, for a simple yet sublime flavour.


  • 8 cherry tomatoes
  • 200ml Mitoku Organic Authentic Mirin

Preparation Method

  1. Peel off the tomato skins using the hot water method: boil some water, pour over the tomatoes, wait a few seconds then place the tomatoes in cold water and peel off the skin.
  2. Bring the mirin to the boil in a pan and simmer until the quantity has reduced by half (about 100ml). Remove from the heat.
  3. Put the tomatoes into the pan with the mirin and leave to cool.
  4. Put the mixture in a large container and refrigerate to chill before serving.
